Fabulous Traditional Hummus

A creamy, versatile, delish spread that is a staple of so many Middle East countries.

Ingredients

  • 1 540ml Chickpeas drained
  • ¼ cup Tahini sesame paste
  • 1 ½ Tbsp Lemon Juice
  • 2 cloves garlic
  • ½ tsp Salt
  • pinch Pepper
  • 30 ml Olive Oil
  • dusting Paprika

Instructions

  • If your using canned Chickpeas make sure to drain them first. Add them to the food processor along with the crushed Garlic, Tahini, Lemon Juice, salt and Pepper.
  • Processes for 30 mseconds to a minute, leaving the food prcessor on slowly start adding the Olive Oil.
  • Continute to run the processor until you have reached your desired consistancy. If you are looking for a very smooth dip, occasionaly turn the processor off, scrape the sides down and continue to puree unitl you have reached the desired consistancy.
  • Finally TASTE, TASTE, TASTE! if it needs a little more flavour don't be affraid your going to ruin anything. Just add a little at a time, hlaf a cruched Garlic or 1 tsp of Lemon Juice, mix and Taste again.
  • If you would like to thin the Hummus, one tablespoona of Water at a time, mix and dicide if you are happy with it.
  • Spoon the Hummus into a Bowl, drizzle a little Olive Oil over the top and dust with a pinch of Paprika. Now it's time to grab a bag of Corn Chips, make some fresh Pita Chips, or cook a Lamb roast and...Enjoy!

Notes

      I have given you a very basic recipe for a great Hummus, but personally I usually double the Garlic and Lemon Juice. That might be a little much for many people so do what I suggest in the recipe, a little at a time. Lets just say there might not be a lot of kissing on a first date with too much Garlic :) .
