the story behind the walnuts

      The reason I made Candied Turmeric Walnuts has a funny story, in my humble opinion.

     Recently I had a bum elbow, so I had been seeing my Physiotherapist. At one appointment I asked him about Naturopathic nutritional options, he suggested Turmeric.

      Turmeric has anti-inflammatory properties, but it must be eaten with some form of Fat to help digest properly and see the most benefit.

      That same day I was planning to work on a recipe for Arugula and Pear Salad. I planned to use Walnuts in the Salad I so my mind jumped to Candied Turmeric Walnuts. I said “self….. they would go great with Arugula and Pears”.

      Well …… I ended up using Pecans in the salad but I digress lol.

     But here we are with Walnuts, also a delish choice who doesn’t like Walnuts. Hmmmmmm I guess if you have a nut allergy you might not….. like………….. nuts….. sorry 🙁 .

     Anyways, I came home from physio, and 30 minutes later Candied Turmeric Walnuts were made. Now you get to be the lucky recipient/judge of my new recipe.

The benefits

      Candied Turmeric Walnuts are not overly sweet but have a nice combination of Spice and Candied texture/flavour.

      I read an article by Emily Laurence called Well and Good about the benefits and use of Turmeric in diet, definitely worth a read. In it, she talks about how much Turmeric you need to consume to gain some of its anti-inflammatory benefits.

      By the end my thoughts were, pills are boring … Nuts, Fat, Sugar, and Spice are delish, … so … let’s mix them together and see what we get. Why not have a Turmeric pill followed by Candied Turmeric Nuts and, win win. 🙂

Nuts coated with Turmeric, Honey and Coconut Oil

The Candied Turmeric Walnuts recipe

      For this recipe, I used Walnuts because… well… that’s what I had on hand lol. You could use Pecans, Hazelnuts, Almonds, it’s really up to you.

      Grab a Baking sheet, line it with parchment paper and, turn the oven to 325° F.  Measure out approx. 2 cups worth of Walnuts ( or nut of your choice ) and place in a mixing bowl.

      Measure out Coconut Oil and Honey and place in a microwave save bowl and zap for 35-40 seconds. If you don’t have Coconut Oil you can use Vegetable Oil instead. If the Coconut Oil hasn’t melted after 35 seconds zap for another 10 seconds to melt.

      Add the Spices to the Coconut Oil, mix and place back into the microwave for 15 more seconds. Pour the Coconut Oil mixture over the Nuts and continue to mix until the Nuts are coated with the Spiced Candy mixture.

The magic

      Spread the Nuts over a Parchment covered sheet pan and place in the oven. After approximately 8 minutes pull the nuts out and give the nuts a good mix. Do your best to flip as many over as possible, don’t go overboard lol.

      Depending upon how hot your oven is another 6-8 minutes of cook time should do the trick.

Toasted Walnuts with Brown Sugar

      After Pulling the Nuts from the oven dust with Brown Sugar and give a mix. Try using a couple of spoons to mix the Brown Sugar, save your fingers. Set aside and let cool.

      Once they have cooled mix with the remaining Brown Sugar that didn’t stick the first time. They are now ready to eat, add to a salad, or store in an air tight container for snack time.

      Candied Turmeric Walnuts make a great snack while watch the TV too 😛 . Enjoy!

Candied Turmeric Walnuts

Egg Free, Dairy Free, Gluten free and Vegetarian

Ingredients

  • 2 C Unsalted Walnuts ( or Unsalted Nut mix )
  • 1 Tbsp Coconut Oil
  • 1 Tbsp Honey
  • 1 tsp Turmeric
  • 1/2 tsp Ginger
  • 1/4 tsp Cinnamon
  • 1 Tbsp Brown Sugar

Instructions

  •       Grab a Baking pan from the cupboard, line it with a piece of parchment paper and, turn the oven on to 325° F.
  •       In a microwave-safe bowl add the Coconut Oil and Honey. Microwave on high for 35-40 seconds or until the Coconut Oil and Honey have melted.
  •       Add all the Spices except the Brown Sugar to the Honey Pot and microwave for another 10-15 seconds.
  •       Drizzle the Honey mixture over the Nuts and mix, continuing to toss until all the Nuts are coated.
  •       Spread the Nuts evenly over a Baking sheet and place them in the oven. Cook for approximately 8 minutes and pull from the oven. Toss the Nuts and return to the oven for another 6-8 minutes.
  •       After they have finished Toasting pull them from the oven and immediately sprinkle with Using a couple of spoons mix the Brown Sugar around.  
  •       Let cool, give one more mix with the remaining Brown Sugar. Now you have not too sweet, not too spicy Candied Turmeric Nuts. Serve as a snack to your guests or add them to a Salad. Enjoy!
