Fabulous Traditional Hummus

      You guys and gals are in luck today, no long speeches, no big text to read just straight to the point. Honestly is there any other way to approach Fabulous Traditional Hummus.

      There are as many varieties of Hummus as there are countries that lay claim to it. Butter instead of Oil, Roasted Garlic, Paprika, Onion, Greek Yogurt, Cumin even Hot Peppers.

      The options of what to serve it with are almost endless too. Classic Pita, Tomatoes, Cucumber, Falafels, Baked Fish or use it as a spread in your next sandwich.

      A staple of the Middle East and dating back as far as the 13th century… wow that is one popular dip. It’s simple, it’s easy to make, it tastes fabulous. what more could you ask for? Maybe for me to stop talking and get to it 😀 .

Fabulous Traditional Hummus

      Hopefully you have a food processor because that is the easiest way to make it. If you don’t own a food processor it just means you will have to put a whole lot of elbow grease into it. A mortar and pestle or, in a pinch, a potato masher.

      I am going to assume that we are using a food processor for now. The instructions will be the same even if you are doing it by hand, it might just take a little longer.

      Add everything except the Olive Oil into the processor. I use processed Lemon Juice from time to time because of the cost of Lemons. But I would strongly recommend using fresh Lemon Juice for Hummus, you will notice the difference.

      The other hint I have is use a Garlic crusher or the back of your knife. Really mash the Garlic before you add it to the processor. This will help release more of the essential Oils.

      Turn the Processor on and purée everything together. Leaving the processor on, very slowly start to pour the Olive Oil into the mixer. Pouring slowly in the beginning will help incorporate the Olive Oil without it separating later.

      Only a couple things left, first is to taste to see if there is anything you need to add. Typically I adjust the seasoning by adding more Lemon Juice or Crushed Garlic. It is hard to recommend which, that depends upon your taste. Personally I like a more pungent Hummus so I go with a lot of Garlic and a splash more Lemon Juice.

      Secondly, what consistency do you like? If you want it completely smooth let the processor run until you reach smooth. You might have to stop and scrape down the edges a couple times to get there.

      Or maybe a little chunky, in which case run the processor until you’re happy. There is no right way or wrong way, just ask everyone where Hummus is a staple in their diet… 50 people will give you 50 variations.

What to serve it with

      The options are endless, try making your own Pita Chips or Falafels. Or just use Hummus as a great party dip with cut Vegetables.

A creamy, versatile, delish spread that is a staple of so many Middle East countries.

Ingredients

  • 1 540ml Chickpeas drained
  • ¼ cup Tahini sesame paste
  • 1 ½ Tbsp Lemon Juice
  • 2 cloves garlic
  • ½ tsp Salt
  • pinch Pepper
  • 30 ml Olive Oil
  • dusting Paprika

Instructions

  • If your using canned Chickpeas make sure to drain them first. Add them to the food processor along with the crushed Garlic, Tahini, Lemon Juice, salt and Pepper.
  • Processes for 30 mseconds to a minute, leaving the food prcessor on slowly start adding the Olive Oil.
  • Continute to run the processor until you have reached your desired consistancy. If you are looking for a very smooth dip, occasionaly turn the processor off, scrape the sides down and continue to puree unitl you have reached the desired consistancy.
  • Finally TASTE, TASTE, TASTE! if it needs a little more flavour don't be affraid your going to ruin anything. Just add a little at a time, hlaf a cruched Garlic or 1 tsp of Lemon Juice, mix and Taste again.
  • If you would like to thin the Hummus, one tablespoona of Water at a time, mix and dicide if you are happy with it.
  • Spoon the Hummus into a Bowl, drizzle a little Olive Oil over the top and dust with a pinch of Paprika. Now it's time to grab a bag of Corn Chips, make some fresh Pita Chips, or cook a Lamb roast and…Enjoy!

Notes

      I have given you a very basic recipe for a great Hummus, but personally I usually double the Garlic and Lemon Juice. That might be a little much for many people so do what I suggest in the recipe, a little at a time. Lets just say there might not be a lot of kissing on a first date with too much Garlic 🙂 .
