Cucumber & Mint Dip

      A light refreshing, dare I say uplifting, Yogurt based dip you’ll love. I came up with this Cucumber & Mint Dip on a whim to accompany the Moroccan Meatballs recipe. It turned out so well I have since used it on Butter Sautéed Broccolini and a dip for Corn Chips. 

      If you can find Thick Plain Yogurt I would recommend going with it. The Cucumber will add a lot of water and we aren’t trying to make a soup. I find the thicker Yogurts hold up better when making a dip.

reduce the water level

      Something I like to do to help reduce the wateriness is removing the seeds from the Cucumber. I like to remove the seeds when I use raw Cucumber because I don’t find they add much flavour. In the example of Greek Salad they help create a large pool in the bottom of the bowl without adding much to the salad..

      They are easy enough to remove, simply start by cutting a long english Cucumber in half lengthwise. Grab a spoon from the drawer, stand over your food recycling bin and scrap them out. As a result you have a lot less water in your Dip.

Cucumber & Mint Dip with Dill and Moroccan Meatballs

      Grab a mixing bowl and add your ingredients together. A nice thick Plain Yogurt along with some Lemon Juice, because we like the tanginess. Fresh Mint and Dill so we have that wonderful fresh taste in our mouth. Grated Long English Cucumber for a little crunch because we love crunch. Finally a little Ground Cumin and Coriander for their wonderful aroma.

      Some Moroccan Meatballs or Sautéed Broccolini and you have yourself some delicious food to top with your new found favourite Dip. One added bonus to this refreshing Cucumber & Mint Dip is it tastes better the next day. Planning a party on the weekend make this dip a couple days ahead of time and check one thing off your list. Even use it a Dressing on a Bean Salad.

Ingredients

  • 1 C Yogurt Try to find a Thick Greek Yogurt
  • 1/2 Long English Cucumber Halved and Seeded
  • 1 Tbsp Lemon Juice
  • 1/4 C Fresh Mint Finely Chopped
  • 2 Tbsp Fresh Dill Finely Chopped
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Ground Coriander
  • Salt & Pepper to taste

Instructions

  •       Start off by cutting the Cucumber in half and then cutting in half again lengthwise. Grab a spoon from the cutlery drawer, stand over your food recycling bin or garbage and scrap the seeds out. You don't need to dig in very hard to scrape the seeds.
  •       Grab a mixing bowl and a grater and grate the Cucumber into the bowl.
  •       Grab a handful of Mint that looks like a quarter cups worth and a couple tablespoons worth of Dill. Put them together on the cutting board and chop away until they become finely chopped. Add them to the mixing bowl.
  •       Add the rest of the ingredients into the bowl, the Ground Cumin & Coriander, Lemon Juice and season to taste with Salt and Pepper. I Usually add a couple pinches of Salt and one pinch of Pepper.
  •       This Dip goes great with Moroccan Meatballs but also elevates simple Sautéed Broccolini. If you find anything else you love to put it on I would love to hear from you. Cheers
