Apple Cider Vinaigrette

      An Apple cider vinaigrette that is a light elegant addition to any green salad. 

      The best parts of this vinaigrette is only needing a few tablespoons of Apple Cider, what you do with the rest is up to you!

      Apple Cider Vinaigrette will pare well with numerous salads. I find using it with complimentary flavours is a wonderful way to go. An example is my Mixed Greens, Apple and Brie Salad that has several ingredients that go nicely with an Apple cider accent.

      Whatever the application I think you will enjoy this pleasantly light vinaigrette.

      It doesn’t get easier to make than this. I threw everything except the oil into my Nutrabullet Blender attachment, I would recommend getting one.. they are great for small tasks with easy cleanup. Once you have puréed everything, take the Center cap off the lid and slowly add the oil.

      The reason for adding the Oil slowly is to help create an emulsion. Emulsion hmmmm, what is that… glad you asked :-).

      There are different kinds of emulsions but for our sakes it’s combining the Oil and Vinegars together so they don’t split apart by the time we reach the table. Adding a fat, in our case Mustard, helps trap the water and Vinegar molecules together so they don’t seperate.

Gluten friendly if you use a Dijon made with White Wine Vinegar not Spirit Vinegar.

Ingredients

  • 2 Tbsp Apple Puree from fruit cup If you would like to use an Apple, 1/4 peeled should do
  • 3 Tbsp Apple Cider
  • 3 Tbsp Apple Cider Vinegar
  • 1/2 tsp Dijon Mustard I use Grey Poupon "with White Wine" for Gluten free
  • 1 tsp Honey
  • 1/2 tsp Rosemary
  • Pinch each Salt & Pepper
  • 1/3 C Grape Seed Oil Use Olive Oil as an alternative

Instructions

Combine everything except the Oil

  • Combine everything except the Oil into whatever blender you're using.
  • Give the blender a couple pulses to combine everything and break up the Rosemary. If you are using proper Apples make sure to remove the skin and seeds, add approxinetly 1/4 of the Apple and pulse the blender until the Apple is broken down.

Creating the Emulsion

  • Start by measuring out the Oil into a cup or measuring bowl with a pour spout on it. This will help you pour the Oil where you want and not all over the counter :).
  • Now is the time to create the emulsion. Turn the Blender on and after it picks up speed remove the center plug in the lid and cover with a Tea Towel.
  • Shift the Tea Towel to the side and very very slowly ( a few drops at a time ) add the oil. As you add Oil you can start turning it into a slow stready stream until all the Oil is in the Blender.
  • Turn off the blender and you should have a beautifuly emulsed Apple Cider Vinairgette.
  • Sit down with Family and Friends and impress with your homemade Apple Cider Vinaigrette, Enjoy.
