Fresh Tomato Salsa with Pineapple
There aren’t many simple condiments out there that can present such a rainbow of colours. If you decide to pulse a fresh Tomato Salsa with Pineapple in a food processor you probably won’t have a beautiful rainbow of colours.
Buuuuut… you if choose to take the time and hand cut all the ingredients that is exactly what you’ll end up with. Little pieces of red Tomato, golden yellow Pineapple, vibrant green Cilantro and Jalapeño and the dark red of Red Onion.
Down and dirty or slow and pretty
The down and dirty quick method of blitzing in a food processor will still make a delicious tasting salsa. But it won’t give you that wonderful fresh appearance. I’m not judging I make salsa both ways, it all depends what I’m making it for.
Sitting around for family movie night, food processor. Friends coming over for poker or Canucks game, food processor.

BBQ or baked lemon and herb trout, cut by hand. The look of red purée isn’t as appealing vs the vibrant colours of everything hand cut. Neither is right or wrong just a personal choice.
Regardless of which way you choose to make salsa it all starts the same way, with great fresh ingredients. Honestly, the closer you are to the farm the better your salsa will taste, there’s really is no way around it.
We’re just talking about several fresh ingredients cut up, mixed together and served. So the only hint I have is trying not to buy ingredients that were grown 2000 miles away. Buy local, buy fresh and buy ripe and you will love your salsa, so will your friends and family.

The fresh tomato salsa with pineapple mix!
The mix for a classic fresh Tomato Salsa with Pineapple is simple. Start with some beautiful, fresh, local Tomatoes, fresh Cilantro, a spicy Jalapeno, and bright Red Onion. Add in a little sprinkle and drizzle of Olive Oil and Salt, and a nice BIG squeeze of Lime and some fresh, ripe Pineapple. Bingo, a big bowl of fresh Tomato Salsa with Pineapple.
There are many different options to add to a Salsa. A couple of cloves of crushed Garlic, Basil or Oregano, Mango instead of Pineapple, even diced Bell Pepper. Check in the bottom notes of the recipes for additions and cheats to the Basic recipe.
If you’re needing a quick Salsa, throw it all into the food processor, give a couple of quick pulses and you’re done. Cutting will inevitably take longer but there’s no debate, it will look a whole lot prettier.

No matter how you make it, which ingredients you choose to add or subtract I’m sure you’ll love the end product. Puréed with a big bag of Chips for movie night or a sexy fresh cut Salsa for some BBQ Lemon Trout. Add a Cervasa, sit back, let the sun shine down on your face and… Enjoy!

Fresh Tomato Salsa with Pineapple
Ingredients
- 2- 3 Roma Tomatoes
- ½ Jalapeno
- ¼ cup Cilantro
- ¼ cup Red Onion
- ¼ cup Pineapple
- 2 cloves Garlic
- 1 Lime juice of,
- Salt
- 1-2 tsp Olive Oil drizzle
Instructions
Food Processor method
- Throw the Tomato, Jalapeno, Cilantro, Onion, Pineapple, crushed Garlic, Lime and a pinch of Salt into the food processor.
- Pulse several times until you reach the consistency you're looking for. Pour into a serving bowl, drizzle a little Olive Oil over the top and serve. Doesn't get any easier then that!!!.
Hand Cut method
- Not any more complicated than the food processor but a little more time consuming.
- Seeding the Tomatoes is an option but not necessary, cut into quarters then remove the core. Slice thinly then turn, cut into a small dice. If keeping the seeds, simply cut 1/8 slices then dice.
- Chop the Cilantro into a rough chop, crush the Garlic.
- Using 1/2 the Jalapeno, dice into very small pieces, no one needs a huge chunk of Jalapeno but everyone loves a little heat.
- Finally cut the Red Onion and Pineapple into a small dice. I have been know to cheat from time to time and use canned crushed Pineapple.
- Everything in a bowl and mix, add a pinch of Salt, a little drizzle of Olive Oil and the Juice of one Lime. Mix again and you're done.
- There are usually two things that I tweak the recipe with, Garlic if I want a little extra tang and Lime Juice to freshen it up and bring it to life. Check the notes for more Ideas and hints… Enjoy!
